Workrooms often track more data than the pre-set columns allow. For example (on the Projects Page): a "Work Orders created" checkbox, Invoice number, Components Ordered Status, Fabrication Start Date, etc. Users also want to rearrange the columns (e.g. put WO after Components, put Assignee columns near the left side, etc)
